Wild animals with great individual differences, such as Odawara's deer and wild boars, and Hokkaido's brown bears, are carefully selected from the most suitable individuals and parts and served roasted. Enjoy the wild boar with a special deep sauce made by adding mustard to the rich soup stock made by simmering the bones and sinews. In addition, Higuma uses its own route to purchase high-quality meat that is free from any peculiarities. The taste of the meat changes depending on what it eats in the wild, so we use ingredients such as honey and berries to make sauces specifically for the meat. Enjoy the once-in-a-lifetime taste.
