ChefAyumi Hayashi - Standard-bearer of a new era of Kappo that knows the world
Born in Kanagawa Prefecture in 1972. While I was a student, I worked part-time at a local restaurant. Finding the work unique to his hometown of Miura interesting, he decided to become a chef. After that, he majored in Japanese-style meal at Tsuji Culinary College and continued his training at a Kyoto restaurant in Akasaka. He also had the opportunity to try his hand at a Japanese Cuisine in Paris, and went to France. After returning to Japan, he opened a business in Koenji, and then opened ``Kousen'' in Asagaya. In 2017, moved to its current location in Akasaka.

The inside of the restaurant is filled with the warmth of wood, and there are only 9 seats at the counter made of a single piece of natural Kiso cypress, and a semi-private room with 6 seats shaded by a noren curtain. Classical music plays, creating a calm and simple Japanese space. On the back wall, there is a Zen calligraphy that begins with ``Mountain monk katsukecha sanpo,'' which means ``There is no need for titles, fancy decorations, or expensive tools.Know sufficiency.'' This word expresses Hayashi's belief that he wants to devote all his attention to providing hospitality to his customers without making extravagant claims.

`` soft-shelled turtle Full Course'' is served in two small pots so that you can see the different parts of the liver, such as sashimi and grilled liver. `` soft-shelled turtle kaiseki course'' is a kaiseki meal with soft-shelled turtle hotpot, so please enjoy a relaxing time while feeling the season. At lunchtime, we also offer a short course that you can enjoy at an affordable price. Other dishes also have a solid presence by putting some effort into the ingredients.
