Since childhood, I have admired craftsmen, and influenced by my mother, who is skilled in cooking, I aimed to become a chef. At the age of 19, I joined "Hikage Chaya" in Hayama to train. After that, I worked at the Japanese restaurant "Aichiya" and "Waketoku Yama" in Nishiazabu, before moving to the famous yakitori restaurant "Tate Mori" in Higashi-Ginza. It was here that I encountered yakitori and became captivated by its charm. After "Tate Mori" closed, I was entrusted with the grill at "Yoshimori." Considering the compatibility with the firewood, we have carefully selected Akita Hinai chicken. However, when fresh, the meat is tough and does not absorb the aroma of the firewood well. Therefore, we let the whole chicken rest in a dedicated refrigerator at 0-1°C for about 10 days to 2 weeks before roasting it. By slowly roasting it as if searing it at the tip of the flames, the skin becomes crispy and the meat juicy, achieving the ideal flavor. When you take a bite of the freshly roasted chicken, the rich aroma unique to firewood envelops you, and the thick skin and meat release a burst of juices.

A single-family house quietly stands in a narrow alleyway between buildings. The interior, with only six counter seats, is compact yet exudes a calming atmosphere. The hinoki (Japanese cypress) counter is set with a lacquered tray, giving the space more of a kaiseki (traditional multi-course Japanese dinner) restaurant vibe than that of a yakitori (grilled chicken) shop. Spending time watching the flickering flames of the firewood in the hearth while enjoying delicious yakitori seems sure to satisfy both the palate and the soul.
