On Sundays and Mondays, which are our regular closed days, we will be open at Ayumi. |
We roast shrimp heads and fish bones and leftover parts in the oven to make soup stock for cooking rice. We also use vegetable peels, like those from asparagus, to create broth for our rice. We turn vegetable trimmings into tempura for our staff meal, ensuring that we use all ingredients without waste.
Our staff uniforms are made from fabric called "True Cotton," which we purchase and create ourselves. For our take away bento boxes, we use bamboo containers instead of plastic. Previously, we used bottled water for making our soup stock, but now we have installed an ion exchange membrane filter on our water purifier to reduce our use of plastic bottles.

Opened in August 2018, "Yamazaki," a kaiseki restaurant in Nogizaka, Tokyo, earned its first Michelin star just three months later in the Michelin Guide Tokyo 2019. The young chef, who honed his skill...s at renowned establishments, combines his solid techniques with experiences in French and Spanish cuisine, all while showcasing his rich sensibility. His philosophy is to create dishes where the essence of what you should enjoy is clearly conveyed. Inside the well-defined outlines of his dishes, you'll find the natural flavors and umami of the ingredients, carefully drawn out through thoughtful consideration.
