At our restaurant, the chef himself travels all over the country and carefully selects gourmet ingredients that can only be obtained locally. While following the traditions of Japanese Cuisine, we offer free cuisine that is not bound by that framework. In order for you to experience the flavors of the four seasons as they are, we use a cooking method that brings out the natural flavor of the ingredients without using any additives. We also offer monthly courses and a puzzle-solving menu that will spark conversation among customers. Please enjoy the beautiful and wonderful ingredients unique to Japan.
Chef[Nobuo Okamoto] Offering original dishes that are not bound by the framework of Japanese Cuisine
Chef Motonobu Oka, who trained at a long-established, traditional restaurant, creates "new Japanese Cuisine" that is based on Japanese Cuisine but transcends the boundaries of that genre. While demonstrating his skills as a chef, he has also appeared in numerous media outlets. In addition, in his hometown of Niigata, he rents farmland and works with the staff from planting to harvesting, so he knows the importance of ingredients. Please enjoy to your heart's content the unique and original products of our store.
