Born in 1978 in Tokyo, Zaiyu Hasegawa trained for five years at the traditional Japanese restaurant Uwotoku in Kagurazaka, before further honing his skills at the kappo restaurant run by his mother. At the age of 29, he became independent and opened Den in Jimbocho. In its third year, the restaurant shifted to a course-menu format and earned one Michelin star in the 2011 Michelin Guide. In 2016, Den received the One To Watch Award in The World's 50 Best Restaurants. It ranked again in 2017, drawing attention from around the world.
