A Tranquil Japanese Restaurant Where You Can Be Amazed by the Chef's "Delicate Skills" and Seasonal Flavors Honed Through Tea Kaiseki
A Japanese cuisine restaurant based on kaiseki, quietly nestled in a back alley of Aoyama, opened by Chef Hideo Mochizuki in 2013 after training at "Kaiseki Ryuuun-an," "Genji-tei Hamadaya," and "Kapp...ou Kisaku."
Here, you can enjoy a variety of dishes that showcase the chef's delicate skills, made with carefully selected seasonal ingredients. The nimono (simmered dish) features a rich dashi broth made from meticulously steeped kombu and freshly shaved katsuobushi. In winter, seasonal ingredients like sweet sea bream from Wakasa, Shogoin daikon from Kyoto, and yuba shinjo make an appearance, celebrating the flavors of the season.
Another highlight is the selection of sake, primarily sourced from "Kawanishiya Sake Brewery" at the foot of the Tanzawa Mountains in Kanagawa Prefecture. Among them, "Takumi" is a limited-edition sake available at only a few select stores nationwide. The combination of thoughtfully crafted dishes and the deep umami of the rice in the sake invites you to take another sip without a word. In this warm, unpretentious atmosphere, you can truly experience the essence of authentic Japanese cuisine—something to savor slowly.
