Opened in 2013 by Hideo Mochizuki, who trained at "Kaiseki Ryuunan," "Genjiten Hamadaya," and "Kappo Kisaku," this kaiseki-based Japanese Cuisine restaurant is quietly located in a back alley in Aoyam
...a. The restaurant serves a variety of courses that allow you to fully enjoy the chef's delicate techniques along with carefully selected seasonal ingredients. Simmered dish dish is finished with a rich, deep dashi broth made from carefully infused kelp and freshly shaved bonito flakes. In winter, seasonal ingredients such as Wakasa tilefish, Kyoto Shogoin daikon, and yuba shinjo are featured, and the flavor of the dashi broth celebrates the atmosphere of the four seasons. Another attraction is the selection of sake, mainly from "Kawanishiya Sake Brewery" at the foot of Tanzawa Mountains in Kanagawa Prefecture. Among them, "Takashi" is a limited edition sake that is only available at a few stores nationwide. The combination of elaborately prepared dishes and flavorful sake that brings out the full flavor of the rice makes you want to take another bite without even a word. The essence of authentic Japanese Cuisine can be felt in the relaxed and warm atmosphere - you'll want to take your time to savor the taste.
