●“Hitomebore”, a delicious dish cooked in a Nanbu iron pot...We help with rice planting and harvesting every year. The head chef himself personally checks the quality of each year's food. The grains are larger than normal, and it has a sweet and umami flavor. ●Dashi soup stock: [Hoshi no Naru Tree] soup stock is made with Rishiri kelp from Hokkaido and Honkarebushi from Kagoshima Prefecture. The basis of all dishes is the soup stock. ●Utogi Wasabi: When presented to Lord Tokugawa Ieyasu, who had moved to Sunpu Castle, he praised its aroma and unique spiciness.
