ChefShingo Wachi: The Solitary Sushi Chef Who Adorned His Hometown with Glory
Born in Fukushima Prefecture. After graduating from high school, he knocked on the door of the famous sushi restaurant "Koban Sushi" in Sendai to become a sushi chef, studying under the previous owner, Mr. Jinko Mari. Many of his training companions were successors, and although Wachi was not from a sushi family, after nine years of training, he was granted a split of the business and returned to his hometown of Fukushima Prefecture, where he opened his own restaurant, inheriting the name "Koban Sushi" in Tanagura Town. He is now regarded as one of the leading sushi chefs in the Tohoku region, and many customers travel from afar to enjoy his cuisine.

What is served here is Edomae sushi, prepared with fresh ingredients sourced daily, featuring techniques such as grilling and beautiful cuts. The rice is made using traditional methods with pure white vinegar, and only the amount needed for that day is polished the night before, showcasing a commitment to quality. The rice, gently shaped, has a perfect balance of flavor, crumbling delicately in the mouth and releasing the taste of the grains. From each dish, one can sense the unique skills of Chef Wachi and his heartfelt hospitality towards guests.
