ChefKenji Yoshida - A Rare Sushi Artisan Proudly Hailing from Kyushu
Born in Fukuoka Prefecture in 1969. At the age of 25, he learned various dishes centered around sushi at "Sushi-dokoro Toku" in Kurume. After eight years of extensive training, he honed his skills. In June 2005, he became independent at "Sushi Yoshida" in Kurume. Inspired by his own explorations of Edomae sushi, he remained committed to the philosophy of "utilizing Kyushu's fish" and established his own style of sushi. In 2015, he renovated his establishment to a face-to-face format to create a closer connection with his guests.

The interior is enveloped in a dignified atmosphere, free from unnecessary decorations. The stately L-shaped counter, which seats a total of nine, was renovated in 2015 with the intention of allowing for a more direct interaction with guests. The oak floorboards have been meticulously carved by skilled artisans, and the ceiling is crafted from carefully joined cedar wood, creating a space with a strong attention to detail. In this setting, reminiscent of a tea room, a refined air lingers, and one can't help but feel excited for the next course.
