Chef穴見秀生氏（アナミヒデオ）―揺がぬ哲学が完成させた究極の椀
1949年、福岡県出身。大阪の日本料理店で修業後、フランス・パリで日本航空の機内食担当を勤め、帰国後「吉兆」本店に勤務。74年に25歳で日本料理店「湖月」の料理長に就任。94年「湖月」を買い取り、屋号を「本湖月」と改める。素材の素晴らしさを引き出すために徹底して国産の素材を用い、四季と折々の歳時を感じさせる”日本の粋”を表現する。2012年、第3回農林水産省「料理マスターズ」ブロンズ賞受賞。
四季を彩る国産の食材の味わいとともに日本文化を器で愉しむ、ハレの日の懐石料理。
石畳の細い路地に、小料理屋やバーが軒を並べる難波千日前の”法善寺横町”。ここに、ミシュラン二つ星を獲得した一軒の日本料理店がある。贅を尽くした数寄屋造りの空間、しつらえ全てが洗練された「本湖月」だ。樹齢600年を越える檜のカウンターの奥で板場に立つのは、「吉兆」本店での修行経験を持つ店主の穴見秀生氏。厳選した国産の食材のみを使用し、その素材の持つ素晴らしさを最大限に引き出すことを真髄とする。料理は
...伝統的な茶懐石の流れを守りつつも、古さを感じさせない繊細かつ奥深い味わいに。献立のメインでもある「煮物椀」はまるで玉手箱のよう。宇宙に見立てた丸い椀の中に料理人として「物語」を作ると言う穴見氏は、美術品や器などの日本文化にも造詣が深く、そのコレクションの一部である器との出会いも楽しみの一つだ。
