Sushi Arai opened in Ginza 8-chome in 2015 after much anticipation. With an interior reminiscent of a sushi restaurant from the Showa era, the owner, Yuichi Arai, personally cares for each customer. H
...is refined manners and warm hospitality, which he has honed at Ginza Kyubey and Sushi Takumi, make this restaurant the best of both worlds. The owner has a particular fondness for tuna, and Arai's style is to change the way he cuts the tuna and the vinegar used in the rice depending on the condition of the toppings that day. Not only are the nigiri sushi delicate, but the large rice, made with Toyama Koshihikari rice, also gives you an overwhelming sense of satisfaction as a meal. We will be keeping an eye on this young owner, who continues to pursue his own sushi in the fiercely competitive Ginza area while following the techniques he learned at these two famous restaurants.
