"Ginza Shimada," which opened in January 2012, prides itself on offering seasonal dishes made with fresh ingredients at affordable prices in a standing bar style. Mr. Sasaki, the young second-generation owner, visits Tsukiji every morning to select the freshest ingredients of the day and create the daily menu.

The interior of the restaurant is a small space with 10 standing counter seats and 4 table seats. However, there is a brightness that makes you forget about the crampedness. As soon as it opens at 5 PM, the counter seats are filled with energy, and on weekends, there can be a line. The restaurant aims to be a "kappo (Japanese-style pub) that women can easily drop by alone," and it is well-known for its friendly and warm atmosphere that is approachable even for young people.
Food A Luxurious Dish Generously Made with Premium Ingredients
The "Ise lobster jelly," made from the broth of Ise lobster and served over sea urchin, is a dish that showcases the concentrated umami of the Ise lobster and the rich flavor of the sea urchin. The signature "karasumi soba" is generously topped with so much karasumi that the soba is hardly visible. The combination of fragrant soba and karasumi makes for a delightful dish that can be enjoyed as a snack. In this way, I want to casually savor authentic Japanese cuisine that generously uses high-quality ingredients, paired with sake and wines from domestic wineries.

Soba noodles sourced from Gifu, made with a generous amount of karasumi (dried mullet roe). The exquisite blend of flavors is so addictive that once you try it, you'll be hooked.
On April 19th, we're bringing in some fresh flower pepper! Come enjoy our first bonito grilled over straw, clam hot pot, wild mountain vegetables, and bamboo shoots! We also have a great selection of drinks to pair with your meal.
