ChefMr. Keisuke Hirano - Skillfully harmonizing multiple ingredients with an emphasis on typicality
Keisuke Hirano is a young chef born in 1990. Since 2011, he has been training at the chateau Restaurants "Joël Robuchon" in Ebisu and holds a sommelier qualification. After that, he went to France and learned authentic French cuisine at the one-star Restaurants "LeCarmin" before returning to Japan. Since July 2018, he has been appointed as the head chef of Restaurants "Jontiash".

A French Barbary variety grown in Shingo Village, Aomori Prefecture. Chef Hirano's specialty has impressed many foodies. Using our unique pasteurization technique, we coat the skin with candy to create a Peking duck-style finish. The skin is grilled crispy, and the meat is moist and rich in flavor.
