ChefMr. Takeshi Naganuma (Takeshi Naganuma) - Outstanding technique and rich sensitivity
Born in 1983, from Saitama Prefecture. Worked at Sushi for two years from the age of 18. While training at ``Il Pacciocone'' in Minami Aoyama, he was invited by Mr. Takayama, the owner of ``Antica Osteria Carneya,'' and Mr. Tsukamoto, the manager, to take on the role of chef. Mr. Tsukamoto fell in love with Mr. Takayama's cooking and persuaded him to open Antica Osteria Carneya in 2007. Currently, Mr. Naganuma takes over the taste and works in the kitchen as the main chef.

Mr. Takayama, whose family owns a long-established Yakiniku (Grilled meat) restaurant, uses his discerning eye to purchase delicious meat from various regions. We use different meats depending on the dish, such as Kuroge Wagyu beef as well as Tankaku beef, which has a reputation for its delicious lean meat, and we also source top quality meat from the aged meat pioneer "Sanoman" and Shiga's prestigious "Sakaeya".
