In order to eliminate food waste, Restaurants rents a field and grows vegetables. In Japan's farming style, bent or damaged vegetables cannot be shipped, so they are all thrown away. By growing our own vegetables, we use them in ways such as pureeing and making soup stock instead of throwing them away.
Limiting the amount of catch and using fishermen and fish species who are fishing with the future of the ocean in mind. We work directly with fishermen who are promoting independent resource management, such as protecting spawning fish and immature fish.We also use not only sea seafood, but also river fish and freshwater fish. It conveys the goodness of fish culture.
Through the children's Cafeterias, we share food-related issues while cooking with children. Food loss, Japanese fishing and agriculture, and gibier. I believe that by letting children know about it, we can change the future of food in Japan. And perhaps it's time to reconsider "itadakimasu", a culture unique to Japan.
In recent years, we have heard news about wild boars, bears, and deer appearing in human settlements and causing damage. The media reports as if wild boars, bears, and deer are to blame, but the truth is that we humans destroyed the forests in which they live for our own commercial purposes. Rather than just shooting them and throwing them away, I think one way we can atone for our sins is to cook and eat them deliciously.
