LATURE's Holiday Notice |
To reduce food waste, we rent a field to grow our own vegetables. In Japan, agricultural practices often lead to the disposal of crooked or damaged vegetables that cannot be shipped. By growing our own vegetables, we creatively use them without waste, making purees and broth from every part.
We use fish from fishermen who limit their catch to protect the future of the ocean. We connect directly with those who practice voluntary resource management, such as protecting spawning fish and juvenile fish. In addition to seafood, we also use river fish and freshwater fish to promote the beauty of Japan's river fish culture.
We engage with children through a community kitchen, where we cook together and discuss food-related issues such as food waste, Japanese fishing and agriculture, and game meat. We believe that by educating children, we can change the future of food in Japan. It may also be time to reconsider the unique Japanese culture of saying "itadakimasu" before meals.
In recent years, we have heard news about wild boars, bears, and deer coming into human settlements and causing damage. The media often portrays these animals as the villains. However, if we trace back the issue, it stems from humans destroying the forests that are their natural habitats for profit. Instead of simply shooting and discarding them, one way we can atone for our actions is by cooking and enjoying these animals as delicious meals.
