My grandfather was a cattle buyer, known as a "bakuro." My father ran a "meat shop." For over 80 years, starting from my grandfather, we have lived our lives facing Wagyu beef. "What is delicious beef?" I ask myself this question every day as I cut meat and prepare dishes. In my view, "Wagyu cuisine" involves having the ability to choose the right cattle, having the power to buy an entire cow, and not imposing unnecessary dishes or work on Wagyu out of self-satisfaction. One learns about oneself through competing cattle and learns from the meat that has been cut. May everything be for the sake of our customers.
