After graduating from university, I honed my skills at sushi and Japanese restaurants, and in 2013, I opened Sushi Ogawa Ginza. Four years later, in June 2017, I relocated to the Higashi-Ginza area to create a restaurant where guests can enjoy their meals in a relaxed and comfortable atmosphere. I aim to evolve into a place that I would personally find enjoyable to visit.
Food Omakase Course ◆ Savor Seasonal Delicacies and Sushi
We offer two types of courses at our restaurant. In the omakase course, we incorporate various seasonal dishes. Our chef believes that good fish is just the tip of the iceberg, so he visits the market every day to personally select the best ingredients. He values the importance of seeing the products firsthand. Thanks to the trust he has built with the wholesalers, we have access to many exceptional items.
Food Carefully Sourced and Handcrafted Sushi with Attention to Detail
Our sushi is particularly recommended for its tuna, abalone, and sea urchin. We source our tuna directly from a long-established market supplier, while the abalone comes from a trusted wholesaler and is served steamed with sake. The sea urchin is sourced directly from the local area, ensuring a fresh taste for you to enjoy. For the sushi rice, we use a blend from a rice shop that selects the best rice according to the year. Not only do they consider the year, but they also carefully choose the moisture content for each season, allowing our chef to prepare sushi with the perfect rice for that time of year.
