The dishes, which have evolved from traditional French cuisine to modern tastes, are light yet deep in flavor. One of their signature menu items, ``Omar Bleu Parmentier Bourg Caviar,'' is a dish made with the highest quality lobster prawns served in a rich sauce. Since 1974, he has been active as Joel Robuchon's right-hand man, and in 1981, at the age of 29, he became executive chef at the three-Michelin-starred Tour d'Argent. In 2002, he received the French Legion d'Honneur and in 2007, he received the Chevalier National Award of Merit. In July 2013, he opened Restaurants Dominique Bouchet in Tokyo and received two Michelin stars in just four months.
