He approaches cooking with the belief that the core of French cuisine is to use up every ingredient, and uses all scraps and other parts that can be used for things like bouillon. It is also used as an ingredient and decoration for non-alcoholic cocktails.
We purchase through distributors that take into consideration CO2 emissions during transportation, and actively use ingredients that can contribute to regional revitalization. Supporting activities related to ethical consumption through purchasing.
In order to further revitalize Ginza, we actively participate in contributions through events and local union initiatives.
