Food Huaiyang Nasai, a taste cultivated in “Gyomai no Sato”
Located on the lower reaches of the Yangtze River, Yangzhou City is known as the ``Sat of Fish and Rice'' due to its warm climate and abundant water, which means it is blessed with fresh seafood and seasonal crops. For 2,000 years, it flourished as a food capital. The seasoning is based on a process that takes time and effort to bring out the flavor of the ingredients, and is characterized by a seasoning called ``shank'', which has a savory yet light taste. It is also known as a famous dish that was loved by Emperor Qianlong of the Qing Dynasty, who was the most gourmet of all Chinese emperors.
ChefExecutive Chef: Toshio Tonosaki
At the age of 16, he went to Jiangsu Province to study cooking. After two years of internship in Nanjing, he went to the famous restaurant "Xiyuan Hotel" in Yangzhou City. For three years from the age of 18, he trained under the special first-class chef, Cho Long, who later became the executive chef of Qin Huai Chun. After that, he learned the basics of Dim sum in Beijing and returned to Japan in 1987 at the age of 22. Joined Mikasa Kaikan in 2005 after working at Hakone Hotel Kowakien ``Obai'' and Four Season Hotel ``Yogensai''. As the sous chef at Qin Huai Chun, he supports the executive chef who was trained during the Yangzhou period. In 2012, he became the head chef of Qin Huai Chun.
