We offer our proud eel that is packed with attention to detail. Every day, we purchase the ingredients from a Shizuoka wholesaler and carefully heat them on a charcoal grill. We pursue a fragrant texture that is crispy on the outside and fluffy on the inside. The secret homemade sauce, which is continuously added to the sauce, has a unique flavor with a pleasant sweetness. The rice we use is Mizukagami, a type of Omi rice grown in the lush green nature of Shiga, which is characterized by its moderate stickiness and mellowness. Enjoy with eel or kabayaki◎
