At our restaurant, we are particular about the noodles and soup stock we use, and we change them according to the season. We use natural salt from Okinawa or bittern from deep sea water for our udon n

For our soba noodles, we use powdered buckwheat leaves (young leaf powder) so that you can consume more rutin, which is contained in regular soba noodles.
