The smooth texture and firmness of soba noodles that are pleasant to the throat are due to the careful hand-made process. [Duck Tsuke Soba Soba] is a popular dish that uses this Ni.Hachi soba. Three pieces of duck meat are used in the thick dipping sauce containing buckwheat flour. Enjoy the soba noodles in the dipping sauce filled with plenty of duck stock.
