The morning at Mimiu begins with making a dashi broth for two hours using Rishiri kelp from Hokkaido, dried bonito flakes from Tosashimizu, and dried honkarebushi from Makurazaki. The scum is removed and the dashi broth is clear and golden in color, concentrating the flavor, and is the key to the taste of Mimiu.
