僕の記憶が正しければ、このエリア（高井田～深江橋～新深江）のラーメンのルーツは、東成の細川ラーメンであるような気がします、豚ばら肉をタコ糸で縛り、ザラメ等調味料と濃い口醤油でぐつぐつと煮込み、焼き豚を作る この出汁が、鶏がらスープと合わさり、屋台の中華そばの完成です！現存するこのエリアの醤油ラーメンは、この進化系と思われる。そして、もっとも、繊細な味に進化したのが、この金久右衛門ではないのだろうか
