SpaceA seamless and sophisticated, yet warm and inviting space
The space is high quality yet relaxed. The counter and tables are finished with a special plastering material called beer stone, giving them an original look. The walls and floors are finished with curved surfaces, and are all finished with plastering rather than wallpaper, creating a seamless sense of unity. The cloakroom, where customers' precious clothes are kept, uses a special paint called "Fukakyu" to protect them from odors and moisture. Please feel free to use it for girls' nights, dates, and business dinners.
Food Carefully skewered and grilled over select charcoal, this is a premium yakitori.
Yakitori is skewered one by one using Kishu Binchotan charcoal that is carefully prepared by our craftsmen. Until 10 p.m., only courses are available, and the Yakitori course is recommended. You can enjoy Grilled skewer of Koshu local chicken and seasonal ingredients grilled over the highest quality Kishu Binchotan charcoal, as well as small dishes made with seasonal vegetables. From 10 p.m. onwards, we offer a menu that goes well with alcohol, making it easy to go to a second bar. There are also limited menus that are not included in the course menu, so you can enjoy your second bar at "Hitotsu, Ue" even more than usual.

Our in-house sommelier carefully selects wines that go well with yakitori. We also purchase the finest sake from all over the country, delivered directly from the breweries. We also offer seasonal sake. Our food coordinator has also selected the glasses to go with the drinks, and we pay close attention to even the smallest details.
