ChefHirotomo Sunada - Mastering Skills Refined Through Experience in the Field
Born in Hyogo Prefecture in 1973, I was inspired to become a chef after helping out at my family's poultry wholesale business, which allowed me to enter the kitchens of hotels and restaurants. I started my career at the restaurant of Hotel Okura Kobe. Later, I was deeply impressed by the home-cooked meals of a friend's mother (who was from Spain) when we worked together at a French restaurant, which led me to move to Spain alone at the age of 29. Over the course of seven years, I honed my skills at several renowned establishments, including Akelarre in San Sebastián, before returning to Japan in 2009. In 2015, I opened my own restaurant, "Eñe," upon becoming independent.

For example, in "Arroz (rice dish)," we seek a variety of domestically produced rice that is as close as possible to the authentic Spanish variety, pursuing its reproducibility. While being rooted in its origins, the Sandata style never stays there; it creates a free and innovative cocina gastronómica (gourmet cuisine). The letter "Ñ" is the 15th letter of the alphabet used only in Spanish. This name engraves a love for the second homeland and daily blossoms with infinite imagination based on Spanish cuisine.

The interior of the restaurant is filled with modern jazz. To the left upon entering, the waiting area features sofas and a fireplace collected by Mr. Sunada, who has a passion for antiques. The olive-colored walls evoke a sense of Spain, and the warmth of the wood creates a stylish yet relaxed atmosphere that brings a sense of comfort. Not only is the food exquisite, but waiting for your meal while watching the chef's craftsmanship over a six-meter-long counter made from a single piece of Asamela wood from West Africa is also a luxurious experience.

Since its opening in 2015, "Eñe" has quickly become a popular spot in Osaka, known for its vibrant Spanish cuisine.
