Enjoy the luxurious dashi made from dried bonito flakes, honkarebushi, and Rishiri kelp, paired with thick udon noodles that become more tender the longer they are simmered, along with the exquisite flavors of fresh mountain and sea delicacies.

The morning at Mibu starts with a two-hour process of making dashi from Rishiri kelp from Hokkaido, Sōta bonito flakes from Tosa Shimizu, and honkarebushi from Makurazaki. The scum is removed, and the dashi, which has concentrated umami, is transparent and has a clear golden color, which is the key to Mibu's flavor.

Please enjoy our freshly boiled soba served with a dipping sauce that includes quail eggs, known as "uzura soba" (registered trademark), as well as our homemade soba infused with flavorful dashi, "kitsune," and seasonal ingredients, along with our homemade udon noodles.
