The carefully selected ``offal'' uses only the small intestines of young domestic cows, mainly from Kyushu. The secret to its tenderness is that each piece is cut into 10g pieces. The secret soup is a rich and delicious blend of Kyushu miso, Saikyo miso, and other types of miso and Oyama's special sauce. Enjoy your favorite from three types: the gentle and mellow soy sauce flavor, or the refreshing Hot Pot style with ponzu sauce containing grated daikon radish.
