ChefKentarou Katou - A Chef Aiming for the Heights of Chinese Cuisine
Born in 1974 in Okayama Prefecture, he began working part-time at a local Chinese restaurant during high school, aspiring to become a chef. At the age of 21, he joined the renowned Chinese restaurant "Azabu Chōkō." He trained at both the Tokyo "Azabu Chōkō Nishi Azabu Branch" and the Kagawa "Azabu Chōkō Takamatsu Main Branch," receiving guidance from the owner-chef, Matsuo Nagasaka. At 28, he became the head chef of the Takamatsu Main Branch. In 2010, at the age of 36, he moved to Okayama and opened "Chinese Cuisine Hasunomi."
Food "Enjoying the Flavors of the Seasons Throughout the Course"
The omakase course begins with a seasonal nourishing soup, followed by 5 to 6 appetizers served in small plates at a good pace. It includes classic dishes like braised shark fin and abalone, as well as seafood from the Setouchi region and aromatic main meat dishes, making for a total of over 10 dishes. This fulfilling course showcases fresh ingredients from both the mountains and the sea, taking advantage of the local resources of Okayama.

Since the opening, Mr. Kato has been focusing on the selection of drinks. He offers pairings that may seem surprising at first glance, such as natural wines and aged sake, which complement Chinese cuisine, and has received positive feedback. If the timing is right, there may be a chance to encounter rare wines from Okayama Prefecture, including "La Grande Colline."

With 15 years of experience at the renowned Chinese restaurant "Azabu Chōkō," Chef Kato has mastered various Chinese culinary techniques and knowledge, including Sichuan cuisine. The omakase course features over 10 exquisite dishes, and a variety of pairings with wine and sake are also available, making it an enticing experience.
