Every morning, we procure fresh sushi toppings. Unlike conveyor belt sushi restaurants, we take the time to carefully prepare each fish from its whole state, ensuring that we serve it in the best possible condition. Since our establishment in the mid-Taisho era, we have placed great importance on hospitality towards our customers. We are also particular about our ingredients; for the rice used in our sushi, we intentionally do not fixate on a specific brand, but instead select the most suitable type based on its aroma, texture, and stickiness at any given time. We also adjust the moisture content based on the weather when cooking the rice. Additionally, the nori used for our rolled sushi is carefully selected each year by our artisans through repeated tastings, choosing only the finest autumn harvest. One of the reasons our rolled sushi is popular is that we have received praise for "not changing the taste since old times."
