The meat used is domestic beef from Miyagi Prefecture, such as Hidakami beef and Kanpo Wagyu beef. ``Special selection'' and ``Special grade'' are Sendai beef with an exquisite balance of marbling and lean meat. It's reasonable because you buy one. The secret sauce, which has been around for over 50 years since my grandmother's time, brings out the flavor of the meat.
