The day of Hisashi Nakahigashi, the owner of "Kusaki", begins with foraging for ingredients in the mountains and fields. Using the ingredients he personally gathers, he captures the essence of nature'...s changing seasons on each plate. From beautifully arranged appetizers that resemble picturesque landscapes, to rich and flavorful soups, rustic grilled dishes, and rice cooked in an "Okudosan" (traditional Japanese stove), every bite evokes the scenery of the countryside. The simplicity of these dishes can truly be considered a remarkable feast.
