Born in 1975 and hailing from Kyoto Prefecture, he grew up in a family that ran a pottery shop, which fostered a deep connection with chefs from a young age, naturally leading him to pursue a career in cooking. He has spent 20 years honing his skills exclusively in Japanese cuisine at renowned hotels and famous restaurants in Kyoto, embodying the spirit of a craftsman. Utilizing his extensive skills and experience, he became independent in October 2015 and opened his own restaurant, Gion Shinbashi Nakaya, in a charming corner of Gion.

We are committed to using fresh seasonal ingredients, such as natural fish directly sourced from Awaji and Wakasa, as well as Kyoto vegetables delivered from local farmers. For the broth that forms the basis of Japanese cuisine, we use carefully selected Rishiri kelp and bonito flakes, which bring out an elegant aroma and depth of flavor.
