At our restaurant, we are particular about the soup stock, which can be said to be the core of our cuisine. Using true kelp and two types of Rishiri kelp, the flavor is extracted at a temperature of 60℃ for 2 hours. Instantly lifting the bonito gives it a transparent flavor. Clear soup stock enhances the flavor of the ingredients. In addition, the head chef visits the central market every morning to carefully select the ingredients. We procure excellent seafood from Setouchi and Kyushu from fresh fish stores with which we have had relationships for over 20 years.
