Food Nanzenji's famous boiled tofu
Kyoto has long been a land blessed with high-quality groundwater. Just like in the past, tofu can only be made for that day using water pumped from the well. That old-fashioned, handmade taste is what makes Kyotofu so delicious. Water is also the most important ingredient in making dashi, the most important ingredient in Kyoto cuisine. Every morning, add Rishiri kelp and dried bonito flakes to just enough water to make the dashi that day. The ``koikuchi yudofu sauce'' made from the ``dashi'' that is the lifeblood of a restaurant is prepared every day just for Yachiyo's yudofu.
