≪うなぎに賭ける心意気を「う」の一文字に託して。≫
「開き五年、串打ち八年、焼き一生」の諺どうり江戸焼うなぎの味の修行は奥深いものがございます。
撰りすぐりの活鰻を背から開き、背びれ、尾びれ、向骨を取り除き、熊野の備長炭の強火で白焼に。それを天然水で打ち清め蒸し、柔らかくなった鰻を竹串一本の扱いで秘伝のタレをつけて焼きあげます。この“焼き”が腕のみせどころ。ぎをんう桶や「う」の味、ここに極まります。
