Born in 1984 and from Fukuoka Prefecture. After starting a career in the apparel industry, my childhood love for cooking and hobby of exploring food gradually led me down the path of the food and beverage industry. Approaching 30, I moved to Kyoto and, after opening a ramen shop and a motsunabe restaurant, finally realized my dream of starting a yakiniku restaurant. My knowledge about meat is self-taught; I have learned by observing and tasting at various restaurants and cooking videos, continuously honing my palate through practice. I strive to create a restaurant that is "delicious no matter when you visit," and I am still in the process of development, dedicating myself to daily improvement.

When you visit for the first time, we confidently offer a recommended course that combines meat and offal. Starting with rich and flavorful sashimi and yukhoe, you can enjoy over 15 different cuts, including perfectly prepared tongue, harami, and loin, in small portions. In particular, the fresh offal, with its unique texture and flavor, is a dish we encourage even those who are not fond of it to try. With a well-balanced mix of fatty and lean cuts, we invite you to indulge in a luxurious full-course meal that will keep you engaged all the way to the finishing egg soup.

In a space reminiscent of an old traditional house with impressive high ceilings adorned with ducts, there are counter and table seats available. Guests can grill their own food using the gas roaster on the table, but if desired, Mr. Matsuo and the staff are available to assist with the grilling. The well-ventilated environment allows diners to enjoy their meals without worrying about smoke or odors, which is another delightful aspect. Additionally, the colorful dishes lined up at the counter are handcrafted pieces that Mr. Matsuo discovered during his travels. The beauty of the meat, combined with the vibrant tableware, speaks for itself.

A hidden midnight yakiniku restaurant that quietly opens after a certain hot pot shop closes. In just one year since its opening in 2023, it has become one of Kyoto's top-class establishments. The res...taurant serves carefully selected meats, cut to order from designated farms, and aims to deliver not just deliciousness but also the stories woven by the producers. While it primarily operates on a referral basis, there are limited new reservation slots available during the "Not Midnight Yakiniku Daichan" events held once or twice a month, so don't miss out!
