This month's mariage partner is "Kyoto duck loin with roasted blood orange bigarade sauce." Uses duck loin raised in Yosano Town, near Amanohashidate, Kyoto. The sauce is ``Bigarade sauce,'' which is a combination of blood orange, gastrique-based fond de veau, and red wine. The complex flavor of Rhone wine and the sweet, sour and spicy sauce will bring out the juiciness of the Kyoto duck even more.

This month's recommended wine is "Dujac". In 1974, it was featured on the wine lists of high-end star-Restaurants throughout France. This is the debut of the "Grand Vin" that was purchased just two years ago. We have about "3 cases" in stock, including the Grand Cru "Echézeaux", "Clos de la Roche", and "Charmes Chambertin". It is already selling for an "outrageous" price on the market.

The dishes are full of seasonal ingredients, such as ``Sweet sea bream with crispy poire sauce Vin Blanc'' and ``Kyoto duck roasted blood orange with bigarade sauce.''
