``Okine'' has an array of a la carte dishes unique to a restaurant specializing in conger eel dishes. We are especially proud of our conger eel shabu shabu, which is quite rare in Kyoto. Its characteristic feature is the richness of the soup stock, which has left its name in the history of soup stock. Incredibly, we use ``hole bone soup'' made from the bones of over 250 conger eel.
