The popular Kyoto brand "Kyoto Duck," known for its perfect texture and rich flavor, can only be enjoyed as an additional ingredient with udon suki at our restaurant. Additionally, the "Kyoto Duck Seiro" and "Kyoto Duck Nanba" are exclusive menu items that can only be tasted here. We invite you to try them at least once.

The morning at Mibu starts with a two-hour process of making dashi from Rishiri kombu from Hokkaido, Sōta katsuobushi from Tosa Shimizu, and honkarebushi from Makurazaki. The scum is removed, and the dashi, which has concentrated umami, is transparent and has a clear golden color, which is the key to Mibu's flavor.
