We use a blend of several carefully selected flours, knead them together, and then deliver them to you after aging and drying. We only use flour, a small amount of salt, and brine.

We use sows weighing approximately 120 kg (called "Nakaonuki") who have given birth twice. Young pork is usually used, but it has a lot of fat and makes the soup cloudy. We chose ``Naka-onuki'' because it goes well with clear soy sauce-flavored soups, but it doesn't taste as strong as ``Onuki-buta''. Although it is domestically produced pork, it is a ``special product'' that has rarely been seen on the market in recent years.

Since the Edo period, green onions grown in Kujo, Kyoto, have been known for their high quality, giving rise to the name "Kujo green onions." It is highly fragrant, and the "slimy" inside of the leaves is full of soft sweetness. At Daiichi Asahi, be sure to enjoy plenty of Kujo green onions and special soup★
