We deliver a carefully selected blend of multiple types of wheat flour that has been kneaded together and then aged and dried. Only wheat flour, a small amount of salt, and kansui (alkaline water) are used.
Food Selected Ingredients - Roast Pork
We use sows that have experienced two births and weigh around 120 kg (referred to as "Chudai-kun"). While pork is typically made from young pigs, this results in a higher fat content, which can cause the soup to become cloudy. The "Chudai-kun" is chosen because it pairs well with a clear soy sauce-flavored broth without being as overpowering as "Dai-kun pork." Although it is domestically produced pork, it is a "specialty item" that has rarely been available in the market in recent years.

Since the Edo period, the green onions produced in Kujo, Kyoto have been known for their high quality, which is the origin of the name "Kujo Negi." They are fragrant, and the "slime" on the inner part of the leaves is full of a gentle sweetness. At Daiichi Asahi, we invite you to enjoy plenty of Kujo Negi along with our carefully crafted soup! ★
