The eel is carefully grilled over binchotan charcoal, allowing you to savor the rich flavor and fatty texture of the domestic eel. Our secret sauce is made with two types of soy sauce from a historic soy sauce brewery and authentic mirin from Aichi Prefecture. It creates a rich and deep flavor while maintaining a refined sweetness.

The ingredients feature fresh fish carefully selected and sourced by the owner directly from the market.
