He trained at several restaurant in Tokyo, including the Michelin-listed Restaurants Aroma Fresca Ginza and La Brianza Roppongi, and worked as a chef at Via Brianza Azabu Juban and OS Nakameguro, before joining Ecru in July 2019. Appointed as a chef. Utilizing the knowledge and skills gained from working at star-rated Restaurants, we specialize in Italian cuisine that only Japanese chefs can make and that Japanese people can feel at ease with, and provide them to our customers.

We communicate with the producers, use the best produce available at the time, and change the menu at the last minute depending on the availability and condition of the produce. Fresh local ingredients from Shonan and rare ingredients sourced from all over the country.The restaurant's name, ``Ecru,'' suggests that the restaurant does not have any fancy decorations, but rather than simply serving them, they create a synergistic effect by combining them. We will provide you with the desired food.

[Our Signature Course] This is a recommended full course made by Chef Shimokubo using all 7 dishes of seasonal ingredients. A carefully selected lineup that makes use of seasonal ingredients and is enjoyable for both the eyes and the palate. We also offer plates for birthdays and anniversaries. We provide our customers with a blissful time on anniversaries and special days with their loved ones.
