By using 80% buckwheat flour and 20% funoori as a binder, we offer Nihachi soba made in-house, which has a smooth and chewy texture. The deliciousness of our in-house soba noodles, which are painstakingly made, come from the "three-part process" of freshly ground, freshly made, and freshly boiled, allowing you to enjoy the exceptional flavor. Soba noodles made with seaweed are rich in ingredients that are good for the body, such as rutin and potassium, which regulate the intestinal environment, so they can be enjoyed in a healthy way. The soup stock made to go with the soba noodles uses shaved bonito flakes and Soda bonito flakes. It has a rich flavor and richness, and has a taste that brings out the aroma of soba.
