太陽、水、風、土があって大地があるから作物が育つ。それらを摂取して命をつなげていることへの感謝を日々思い起こしています。面の悪い大根の皮でも、丁寧に飴炊きにして見栄えも気にならないように仕立てれば、それもご馳走になる。そういう、心と体が豊かになる料理を大事にしたいと考えています。また、お客様の年齢やその日の体調などを見ながら、きれいに食べ切っていただける量に調整しています。
サステナブル食材の活用
この場所にわざわざ来ていただくには、その理由になるものを作らなくてはならないと考えています。高級食材に頼らず、この土地でとれた、たとえばジャガイモひとつ煮たものを、丹精込めて洗練された一品に仕上げること。「ここ」だけでしか できないもの、この土地に合ったものを出そうという想いで、日々料理に向き合っています。
