Based on the concept of "Edomae Sushi techniques and fresh Hokkaido fish," we offer the finest sushi made with carefully selected fresh ingredients and aged. We purchase the best seasonal ingredients of the day from all over Japan, including Hokkaido, and we are particular about tuna. Our suppliers are ``Yamayuki,'' a top-level tuna intermediate wholesaler in Japan that has a solid eye and is trusted by many famous stores. These toppings are aged and our craftsmen consistently prepare them to the best of their ability. Please enjoy the flavorful nigiri.

As the taste of the rice determines the taste of the sushi, we also pay special attention to the rice, which brings out the flavor of the topping. The rice we use is "Yukisayaka" from Mukawa-cho, Hokkaido. We use rice that has won a gold medal. The vinegar that goes with it is a mix of red vinegar mixed in various ratios.
