Food Produced by Hiroshima's spring water. High-quality dashi soup made with kelp from various parts of Japan.
The soft water that springs from all over Hiroshima Prefecture brings out the natural flavor of kelp. We use spring water from various locations along with kelp purchased from all over the country. We purchase kelp from various regions depending on the season and climate, such as first-grade Rishiri kelp that has been aged for 7 years, and Rausu kelp that has a "black run". We also paid special attention to seasonings. The ponzu sauce we have been using for about 32 years is mild, and we use about 10 different types of salt. Please enjoy the taste of the ingredients even more.

The fish we use is specially prepared for our restaurant from Sasue Maeda Uoten in Yaizu City, Shizuoka Prefecture, which is attracting worldwide attention. Because each type of fish is processed in a unique way, you can enjoy not only its freshness but also its individual flavor when making, grilling, or Simmered dish. The beef is an original cut made by meat specialist Mr. Numamoto to match our restaurant's offerings. We also order vegetables from producers all over the country that we have relationships with. Please enjoy the deliciousness of carefully selected ingredients.

A peaceful Japanese space with subdued colors that won't disturb guests' precious moments. The various dishes that unfold before your eyes are served on Kyo-yaki and Ko-Imari vessels. Based on the word "chiso," which is also included in the store's name, we search for ingredients from all over the country, from west to east, and welcome guests with content that is tailored to the host. We would like to invite guests for entertaining or sightseeing to stop by as part of their special day. Spend time with your loved ones and those you want to cherish.
